To make this Peach Mango Smoothie Bowl you will need
- Frozen Peaches
- Frozen Mango
- Banana, Frozen is ideal but fresh works also
- Maple Syrup
- Ginger, I prefer fresh sliced when I have it on hand but powdered works also
- Greek Yogurt, i prefer plain non fat but your favorite yogurt will work also
- Vanilla Almond Milk, I used sweetened in this recipe because my husband did the shopping and it tasted amazing but for a lower sugar option sub in unsweetened
INSTRUCTIONS
Start by adding the frozen fruit and yogurt to the blender, then add in the ginger and maple syrup. Add in half of the almond milk and then using the pulse setting on the blender, start blending in about 10-15 second intervals. You don’t want the bowl to get too thin and runny or the toppings won’t set. Add in more almond milk as needed to get everything to a nice and creamy consistency.
Once everything is well blended transfer to a small dish. Working quickly, top the frozen smoothie bowl with fresh peaches, banana slices, some granola and coconut flakes! The toppings possibilities are endless really!
TIPS
For a thick and creamy bowl: make sure the fruit is frozen to start with and that you work quickly so it doesn’t melt before you get your toppings set. Nothing is wrong if they fall in but it’s just tastier to eat a few bites while they’re still on top.
If the bowl is too thin: add an additional chunk of frozen banana or fruit.
To keep the calories under control as they can definitely add up quickly depending on what toppings you add, use a smaller bowl and don’t do full servings of each topping if you want to add a lot of things. Go with smaller amounts of each topping. However if you’re adding toppings to get the nutritional benefits then use less toppings and a serving of one or two.
Prep Ahead
To prep these bowls in advance you can do so really easily! Start with a freezer safe bowl or container with a lid or you can use saran wrap. Then Blend the bowl as directed. Once blended spread the bowl evenly into the container and place the lid on without the toppings and store in the freezer. When ready to enjoy, pull out of freezer remove lid, let thaw about 20-30 minutes and then add the toppings and enjoy!
