Grilled Pineapple Chicken Salad

Summer is in full swing and a great way to use up the garden’s fresh greens is to pair them with grilled pineapple, chicken and other fresh foods like blueberries and avocado to make a mouth watering salad you’ll crave all summer! This recipe is so fresh and delicious, you don’t even need a dressing! 

What makes this dish nutritious?

The thing is, we all know salads are healthy but it’s the dressing we have trouble with! Is it loaded with fat and sugar? Does it have artificial sweeteners and weird chemicals in it? Dressings can be so hard to pick out and sure you can make your own dressing but sometimes you just don’t have the time or ingredients to work with. This salad has such a good combo of sweet and creamy you won’t need to worry about picking out or finding the time to make a dressing that pairs with it!

This salad is seriously so summery you will love it! First off, it has grilled chicken breast which is a summer classic then it has grilled pineapple! Ever have grilled pineapple? It’s so tasty. You get the sweet pineapple flavor with the char of the grill, it’s such a fun way to eat pineapple. Next you get a nice, crunchy sweet flavor from the blueberries and last you get a creamy mix from the avocado.

How to Grill Pineapple

To grill Pineapple, start with a hot grill then simply place pineapple slices on the grill and sear for about 2 minutes, flip once and grill on the other side. Remove from heat. Serve warm. 

Variations: If pineapple is a bit dry or to enhance the flavor brush a small amount of olive oil on each side of the pineapple slices. Sprinkle with sea salt and pepper, grill each side for about 2 minutes until a nice char appears on each side. Serve warm. 

MAKE THIS DISH 

INGREDIENTS 

  • Lettuce greens; I used a mix of spinach and green leaf lettuce
  • Chicken Breast 
  • Pineapple fresh or canned 
  • Blueberries; fresh or frozen
  • Avocado 
  • Red Onion 
  • Olive Oil
  • Sea Salt 
  • Pepper
  • Garlic 
  • Parsley 

STEP BY STEP

Clean and trim chicken breast, place in a gallon sized baggie or bowl. Set aside.  Season with sea salt, pepper, parsley and any additional seasonings you love. Top with olive oil stir or shake, set aside. 

Microwave frozen blueberries for about 30 seconds, set aside. 

Wash and chop greens, pat dry, set aside to dry a bit more. 

Prep fresh ingredients; core and slice pineapple, OR drain if using canned. Slice, core and skin avocado. Chop Onion. 

Turn on the grill to warm up. 

Once warm, add chicken breast and sliced pineapple. 

Grill until pineapple has a light char and chicken reaches and internal temp of 165*. 

Place greens in a bowl, top with grilled chicken and pineapple, add onion, blueberries and top with avocado. Enjoy this super-simple salad recipe!

VARIATIONS 

Use fresh blueberries

Use sweet yellow onion 

Add corn

Vegetarian Option: Swap Chickpeas (rinsed and drained ) for chicken

MEAL PREP TIPS

This salad works well as a prep ahead dish to make a few salads at once and eat all week. Here are some tips to prep this ahead so you can save time and keep the salad fresh all week.  

  • Portion out and place greens, onion and chicken into containers but keep blueberries and pineapple in their own separate dishes so that they don’t get the lettuce soggy. Add the fruit just before serving. Reheat the pineapple if you prefer it warm.
  • keep  frozen blueberries in your freezer so you can have them on hand anytime
