Chocolate Chip Pumpkin Oat Muffins

So these are awesome! They’re sweet yet not loaded with fake or refined sugar. Just the right amount of honey and chocolate to curb your sweet tooth without causing a sugar rush and the right amount of pumpkin too!

You know I have a smoothie almost everyday but sometimes in the morning all of a sudden I’m just instantly hungry and I want something super quick and easy! Muffins and energy bites are a great option for those instances. I had one of these muffins this morning instead of my smoothie and it was perfect! You can eat them whenever and they also make a good lunch treat for the kiddos!

I hope you love these Muffins! Make sure to add more or less chocolate, spice as you like and feel free to swap out the honey for maple syrup to make it your own.

Pumpkin Oat Chocolate Chip Muffins

Ingredients

2 Cups old fashioned rolled oats

3 Eggs, whisked

1 1/4 Cup Pumpkin

1/4 Cup Honey

1/2 tsp Vanilla

1 1/2 tsp pumpkin pie spice

1/4 tsp salt

2 tsp baking powder    

Instructions

1.Preheat oven to 350*

2. Crack eggs into a bowl, whisk

3.Add pumpkin, vanilla and honey, Stir

4.Add in oats and chocolate chips, pumpkin pie spice and baking powder.

5.Stir all together until well combined

6. Place about 1/4 C of mixture into a muffin tin (spray pan first with nonstick cooking spray I use an olive oil spray)

7. Bake about 20 Minutes until center comes clean.    

Notes

Check to see if they're done by using a knife or tooth pick inserted into the center of the muffin, they will be a tad gooey but that's perfect! You don't want to cook them too long after that or they will dry out. They'll still be fine but won't be as gooey.
