I’m a smoothie girl so for me having a smoothie for breakfast is perfect but sometimes I need a literal grab n go option and these are the perfect alternative to smoothies! The other main reason I wanted to make these is that my kiddos and husband love yogurt, they like the ones with fruit in them and also like the store bought parfaits. However it’s hard for me to buy those and here is why
- They are not always but most often, loaded with sugar
- They can contain artificial ingredients
- They are more expensive versus making your own
I have the mindset that if I can make it healthier and cheaper myself then it’s totally worth the effort!
WHY MAKE THESE
These Blackberry Chia Parfaits are loaded with superfood ingredients like chia seeds, probiotics and antioxidants. They’re gut friendly and well balanced. They are an excellent breakfast option because they have a balanced blend of nutrients from healthy carbs and fiber from the peanut butter and blackberries. The chia seeds, peanut butter and greek yogurt provides an excellent amount of protein and also healthy fats. These ingredients combined not only taste amazing but create a complete meal to properly fuel your body!
Making your own food like these parfaits has many benefits as you can boost nutrients, eliminate ingredients that don’t align with your goals and bodies needs while creating blends that do.
It’s such a great feeling when you’re running late or just rushing out the door like we do too often and remember you have these nutritious parfaits in your fridge waiting for you for that exact purpose – to have a highly nourishing meal available when you need it versus skipping the meal all together or just grabbing something easy and usually not all that nutritious.
INGREDIENTS
Yogurt, use what you like but a plain greek yogurt has no sugar and more protein than regular yogurt so I use that
Blackberries, frozen you can swap for fresh berries
Chia Seeds, since they will soak in the yogurt overnight you don’t need to pre-soak them here
Peanut butter, Natural
Maple Syrup, real maple syrup or honey works as well
Cinnamon, ground
SUPPLIES
- Ingredients listed
- Pint Mason Jars and lids or small containers
- Spoon to mix ingredients
- Measuring utensils
MAKE IT
- Gather your supplies
- To each jar add;
- Yogurt
- Add Chia seeds. mix well
- Add Peanut butter, maple syrup and Cinnamon , stir until combined
- Add Berries
- Place lid on jars
- Store In Fridge
VARIATIONS
Create your own blend by swapping ingredients out for similar ingredients
BOOST PROTEIN: add 1 scoop of your favorite protein powder to each jar, you might have to add a little bit more yogurt so it isn’t too thick or dry or a splash or two of cold water
DAIRY FREE: Swap a Dairy free yogurt like coconut yogurt for the regular
STORE & SERVE
Store the parfaits in an air tight container with a lid. I prefer to use glass wide mouth mason jars, I have a ton for canning and they’re just a super handy meal prep dish to use. They clean up well, hold up well and you can even freeze them. You could also use a tupperware container. Use what you prefer or already have on hand just make sure it has a lid or place plastic wrap on top to keep them covered.
Store them in the fridge for about 5 to 6 days after preparing them. When you’re ready to eat one just pop the lid off and enjoy! It’s as easy as that!
Ingredients
3 Cups Greek Yogurt, plain
8 TBL Peanut butter, natural
2 Tsp Maple Syrup
4 Tbl Chia Seeds
2 Cups Blackberries, frozen
Cinnamon, to taste I used about an 1/8 tsp per each container
4 Mason Jars with lids and rings
Instructions
To each Jar add;
- 3/4C Greek yogurt
- 1 Tbl chia seeds, then mix well
- Next add peanut butter, maple syrup and cinnamon, stir
- Top with 1/2C Blackberries to each and stir gently
- Place lids on jars, Serve immediately or and store in the fridge for up to 6 days.
